Bell peppers (yellow)
Cauliflower or potatoes (or mix)
Black olives
Salsa
Avocado or guacamole
Egg
Olive oil, salt, pepper, cumin, paprika
Instructions:
- Dice vegetables: Bell pepper, cauliflower/potatoes into bite-size.
- Sauté: In a pan with olive oil, cook veggies over medium-high heat for 10–15 minutes until soft and slightly crispy. Season with salt, pepper, cumin, and paprika.
- Fry egg: Sunny-side up or to preference.
- Assemble bowl:
Base of sautéed vegetables
Top with olives, salsa, avocado
Finish with fried egg on top
